Homemade Strawberry Cake

Ingredients

For the Cake:

  • 1 ½ cups fresh strawberries, pureed (about 1 pound)
  • 2 ½ cups all-purpose flour
  • 2 ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 cup unsalted butter, softened (2 sticks)
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1 cup buttermilk (or substitute with milk and vinegar)

For the Strawberry Frosting:

  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • ¼ cup fresh strawberries, pureed
  • 1 tsp vanilla extract
  • 1-2 tbsp heavy cream (optional, for consistency)


Instructions :

1. Prepare the Strawberries:

  • Wash and hull the strawberries. Puree them in a blender or food processor until smooth. Measure out 1 ½ cups of puree and set aside.

2. Preheat the Oven:

  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

3. Mix Dry Ingredients:

  • In a bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

4. Cream Butter and Sugar:

  • In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy (about 3-4 minutes).

5. Add Eggs and Vanilla:

  • Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.

6. Alternate Adding Dry Ingredients and Buttermilk:

  • Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk. Start and end with the dry ingredients. Mix until just combined. Do not overmix.

7. Fold in Strawberry Puree:

  • Gently fold in the strawberry puree until evenly incorporated.

8. Bake:

  • Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for about 10 minutes, then transfer to wire racks to cool completely.

9. Prepare the Frosting:

  • In a large mixing bowl, beat the softened butter until creamy. Gradually add the powdered sugar, mixing on low until combined. Add the strawberry puree and vanilla extract, and beat until smooth and fluffy. If the frosting is too thick, add heavy cream a tablespoon at a time until desired consistency is reached.

10. Assemble the Cake:

  • Once the cakes are completely cool, place one layer on a serving plate. Spread a layer of frosting on top. Place the second layer on top and frost the top and sides of the cake.

11. Decorate:

  • Optional: Decorate the top with fresh strawberry slices or additional frosting designs.

12. Serve and Enjoy:

Tips

  • For extra strawberry flavor, you can add some chopped strawberries between the cake layers.
  • This cake pairs wonderfully with whipped cream or ice cream!
