Ingredients 🛒

  • 3 large eggs (separated)

  • ½ cup granulated sugar

  • ¼ teaspoon salt

  • ½ teaspoon vanilla extract

  • ½ cup all-purpose flour

  • 1 tablespoon cocoa powder

  • Food gel coloring (blue, purple, pink)

  • 1 cup heavy whipping cream

  • ¼ cup powdered sugar

  • Purple and blue sprinkles (optional, for decoration)

Instructions ⏱️

1️⃣ Preheat & Prepare: Set oven to 350°F (175°C). Line a baking sheet with parchment paper and lightly grease it.
2️⃣ Whip Egg Whites: Beat egg whites until stiff peaks form, then gradually add half of the sugar while continuing to beat.
3️⃣ Mix Yolks: In a separate bowl, whisk egg yolks, remaining sugar, salt, and vanilla until smooth. Gently fold in the whipped egg whites.
4️⃣ Incorporate Dry Ingredients: Sift flour and cocoa powder over the mixture and carefully fold in until just combined. Avoid overmixing.
5️⃣ Create the Galaxy Effect: Divide the batter into three bowls and tint each with blue, purple, and pink food gel. Lightly swirl the colors together on the prepared baking sheet.
6️⃣ Bake: Bake for 10 minutes, or until the cake springs back when touched. Let cool slightly, then loosen edges with a knife.
7️⃣ Make the Filling: Whip heavy cream and powdered sugar until stiff peaks form. Spread evenly over the cooled cake, leaving a small border.
8️⃣ Roll & Chill: Carefully roll the cake from the short end, using parchment paper as a guide. Chill in the fridge for at least an hour to set.
