These fritters are the undercover superheroes of the veggie world. Disguised as crispy, golden bites of cheesy goodness, they swoop in to save the day—especially when picky eaters (or skeptical adults) are around.
They come sizzling out of the pan with just the right amount of crunch, a melty cheese center, and absolutely no trace of “boring vegetables.” In fact, most people have the same reaction after one bite: Wait… this has zucchini in it?!
Whether you’re sneaking in some greens for the kids or just trying to use up those two rogue zucchinis in your fridge, this recipe is an easy win. Plus, they’re ridiculously snackable—so go ahead and double the batch.
Ingredients
- 2 medium zucchinis, grated
- 1/4 cup chopped onion
- 1/3 cup grated cheese (cheddar or mozzarella both work great)
- 1 egg
- 1/3 cup all-purpose flour
- 1/2 teaspoon baking powder
- Salt and pepper, to taste
- Oil for frying (vegetable or olive oil)
Instructions
- Grate the zucchini using a box grater or food processor. Then, the most important step: squeeze out as much moisture as possible using a clean kitchen towel or cheesecloth. No one likes soggy fritters.
- Mix it up: In a large bowl, combine the grated zucchini, chopped onion, grated cheese, egg, flour, baking powder, salt, and pepper. Stir until it all comes together into a thick batter.
- Heat the oil in a skillet over medium heat. Once it’s hot, drop spoonfuls of batter into the pan. Use the back of your spoon to gently flatten them into fritter shapes.
- Fry until golden: Cook each side for about 3–4 minutes, or until beautifully golden brown and crispy. Flip carefully and don’t overcrowd the pan—give them space to crisp up.
- Drain and serve: Place cooked fritters on paper towels to soak up any extra oil. Serve hot with a dollop of sour cream or a cool yogurt dip.

Double the batch. These tend to vanish faster than you’d expect—especially once someone discovers how good they are dipped in ranch or wrapped in a pita with hummus.
