Whether you’re having a leisurely weekend breakfast, celebrating a birthday, or simply wanting to impress guests without breaking a sweat, these pancakes are guaranteed to hit the spot. You get all the comfort and flavor of cinnamon rolls, but in a way that’s way easier and far fluffier.
Ingredients
For the Pancakes
- 1 ½ cups all-purpose flour
- 1 tablespoon sugar
- 1 tablespoon baking powder
- ½ teaspoon salt
- 1 ¼ cups milk
- 1 egg
- 3 tablespoons melted butter
For the Cinnamon Swirl
- ¼ cup brown sugar
- 2 tablespoons melted butter
- 1 teaspoon cinnamon
For the Icing Drizzle
- ½ cup powdered sugar
- 1–2 tablespoons milk
- Dash of vanilla extract
Instructions
- Make the pancake batter: In a large bowl, whisk together the flour, sugar, baking powder, and salt. Add in the milk, egg, and melted butter, and stir until the batter is smooth and combined.
- Prepare the cinnamon swirl: In a small bowl, mix together the brown sugar, melted butter, and cinnamon. This will be your swirl that adds the cinnamon roll flavor!
- Cook the pancakes: Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter. Pour about ¼ cup of pancake batter onto the skillet, forming a nice round pancake.
- Add the cinnamon swirl: While the pancake is cooking, quickly drizzle a bit of the cinnamon mixture on top of the batter. You can use a spoon to swirl it gently into the pancake batter, making sure not to overdo it. This creates those cinnamon rolls-like swirls we all love!
- Flip and finish cooking: Once you see bubbles form on the surface of the pancake, it’s time to flip. Cook for another 1–2 minutes on the other side, until golden brown and cooked through.
- Drizzle with icing: Once your pancakes are stacked and ready to go, drizzle the icing over the top. You can make the icing by simply stirring together powdered sugar, milk, and a dash of vanilla extract until smooth. Pour generously over the warm pancakes for that sweet, bakery-style finish.
