Ingredients

For the Pancakes

  • 1 ½ cups all-purpose flour
  • 1 tablespoon sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 ¼ cups milk
  • 1 egg
  • 3 tablespoons melted butter

For the Cinnamon Swirl

  • ¼ cup brown sugar
  • 2 tablespoons melted butter
  • 1 teaspoon cinnamon

For the Icing Drizzle

  • ½ cup powdered sugar
  • 1–2 tablespoons milk
  • Dash of vanilla extract

Instructions

  1. Make the pancake batter: In a large bowl, whisk together the flour, sugar, baking powder, and salt. Add in the milk, egg, and melted butter, and stir until the batter is smooth and combined.
  2. Prepare the cinnamon swirl: In a small bowl, mix together the brown sugar, melted butter, and cinnamon. This will be your swirl that adds the cinnamon roll flavor!
  3. Cook the pancakes: Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter. Pour about ¼ cup of pancake batter onto the skillet, forming a nice round pancake.
  4. Add the cinnamon swirl: While the pancake is cooking, quickly drizzle a bit of the cinnamon mixture on top of the batter. You can use a spoon to swirl it gently into the pancake batter, making sure not to overdo it. This creates those cinnamon rolls-like swirls we all love!
  5. Flip and finish cooking: Once you see bubbles form on the surface of the pancake, it’s time to flip. Cook for another 1–2 minutes on the other side, until golden brown and cooked through.
  6. Drizzle with icing: Once your pancakes are stacked and ready to go, drizzle the icing over the top. You can make the icing by simply stirring together powdered sugar, milk, and a dash of vanilla extract until smooth. Pour generously over the warm pancakes for that sweet, bakery-style finish.
