Ingredients:
- 1/2 cup softened butter
- 1 cup sugar
- 2 large eggs
- 1 very ripe banana, mashed
- 8 ounces crushed pineapple (undrained)
- 2 cups flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/4 cup shredded coconut

Preparation:
- Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).
- In a large bowl, cream together the softened butter and sugar with a mixer until light and fluffy. Add the eggs one at a time, beating well after each addition.
- Stir in the mashed banana and crushed pineapple.
- In a separate medium-sized bowl, sift together the flour, baking powder, baking soda, and salt. Add these dry ingredients to the wet mixture.
- Stir in the shredded coconut flakes.
- Pour the batter into a greased loaf pan (9 x 5 inches).
- Bake for about 60 minutes or until a toothpick inserted into the center comes out clean.
