Hawaiian Banana Bread

Ingredients:

  • 1/2 cup softened butter
  • 1 cup sugar
  • 2 large eggs
  • 1 very ripe banana, mashed
  • 8 ounces crushed pineapple (undrained)
  • 2 cups flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup shredded coconut

Banana Bread

Preparation:

  1. Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).
  2. In a large bowl, cream together the softened butter and sugar with a mixer until light and fluffy. Add the eggs one at a time, beating well after each addition.
  3. Stir in the mashed banana and crushed pineapple.
  4. In a separate medium-sized bowl, sift together the flour, baking powder, baking soda, and salt. Add these dry ingredients to the wet mixture.
  5. Stir in the shredded coconut flakes.
  6. Pour the batter into a greased loaf pan (9 x 5 inches).
  7. Bake for about 60 minutes or until a toothpick inserted into the center comes out clean.
