Ingredients:
- 1 or 2 pieces of salmon (about 1 1⁄2 lbs)
- 2 tablespoons butter
- 1 tablespoon peanut oil or canola oil
- Lemon slices
- Roasted vegetables (refer to the “vegetables” section)
- 2 tablespoons Jerk Seasonings (combination)
- 1 tablespoon salt
- 1 tablespoon black pepper
- 1⁄2 teaspoon chili powder
- 1⁄4 teaspoon red pepper flakes
- 1⁄4 teaspoon parsley
- 2 bay leaves
- 1 tablespoon thyme
- 1 tablespoon cinnamon
- 1⁄2 teaspoon nutmeg
- 1⁄2 teaspoon allspice
- 1 tablespoon brown sugar
- Lemon pepper seasoning:
- 1 tablespoon salt
- 1 tablespoon cracked black pepper
- 1 tablespoon lemon zest

Preparation:
- Heat a frying pan over medium heat and add peanut oil or canola oil.
- Rinse the salmon and pat it dry. Lightly spray with oil. Season all sides with Jerk and Lemon Pepper seasoning.
- Once the pan is hot and the butter starts to brown slightly and smoke, gently add the salmon and cook for 2-3 minutes until slightly charred on each side.
- Transfer the salmon and lemon slices to a greased oven-safe dish. Broil on a high central shelf for 8-10 minutes, or until cooked through. Sprinkle with lemon juice immediately after removing from the oven.
- Serve with roasted vegetables.

Personal Remarks: PRO tip: This method is known as pan-searing. Ensure that the butter starts to brown before adding the salmon. This will give the salmon a nicely charred, spiced exterior.
