potato pancakes


  • 3 tablespoons flour (40 grams)
  • 4 tablespoons condensed milk (50 grams)
  • 1 onion (50 – 100 grams)
  • 1,000 grams large potatoes
  • 2 eggs
  • 1 ½ teaspoons salt
  • Freshly ground white pepper
  • 250 milliliters oil for frying


  1. Begin by peeling the potatoes. Rinse them under cold water and pat them dry. Grate them into a bowl using the coarse side of a grater.
  2. In a small bowl, whisk together the flour and condensed milk. Grate the onion and add it to the mixture along with the eggs, then mix thoroughly.
  3. Drain the grated potatoes to remove excess water. Combine the flour mixture with the potato mixture and season with salt and pepper.
  4. Gradually heat the oil in a large pan until very hot. Spoon the potato mixture into the pan, shaping them into pancakes, and fry for 3 minutes on each side.
  5. Once cooked, remove from the pan, drain excess fat, and arrange them side by side (not stacked). Serve hot.
