Ingredients:
- 1 cup Celery (diced)
- 2 pounds new Potatoes (with skin left on – washed)
- ½ cup Red Onion (Lal Pyaz) (diced)
- ¾ cup Dill Pickles (diced)
- 3 Eggs (hard-boiled, peeled, and coarsely chopped)
- 1 to 2 Green Chillies (Hari Mirch) (chopped)
- ¼ cup Black Olives (diced)
- ¼ tsp Red Chilli Powder (Pisi Lal Mirch)
- ½ tsp Salt
- 1 cup Mayonnaise
- ¼ cup Extra Virgin Olive Oil
- ¼ tsp Black Pepper (Pisi Kaali Mirch) (freshly ground)
- Vinaigrette Dressing (to coat potatoes – optional)
- 2 tbsp Fresh Coriander Leaves (Hara Dhania) (chopped)
How To Make Spicy Potato Salad:
METHOD:
- Boil potatoes until tender but still firm at the center (about 15 minutes). Whisk olive oil, vinegar, salt, and black pepper together in a large bowl.
- Drain potatoes, and when cool enough to handle, cut them into 1-inch cubes. Toss with vinaigrette dressing until coated. Let cool.
- Once cool, add diced onion, celery, dill pickles, green chillies, coriander leaves, and black olives.
- Mix. Combine mayonnaise with red chilli powder in a small bowl and add to the potato mixture.
- Add chopped eggs and toss gently. Chill for 1 to 2 hours before serving.
