  • ¾ cup Dill Pickles (diced)
  • 3 Eggs (hard-boiled, peeled, and coarsely chopped)
  • 1 to 2 Green Chillies (Hari Mirch) (chopped)

  • ¼ tsp Red Chilli Powder (Pisi Lal Mirch)

  • Vinaigrette Dressing (to coat potatoes – optional)
  • 2 tbsp Fresh Coriander Leaves (Hara Dhania) (chopped)

How To Make Spicy Potato Salad:

  1. Boil potatoes until tender but still firm at the center (about 15 minutes). Whisk olive oil, vinegar, salt, and black pepper together in a large bowl.
  2. Drain potatoes, and when cool enough to handle, cut them into 1-inch cubes. Toss with vinaigrette dressing until coated. Let cool.
  3. Once cool, add diced onion, celery, dill pickles, green chillies, coriander leaves, and black olives.
  4. Mix. Combine mayonnaise with red chilli powder in a small bowl and add to the potato mixture.
  5. Add chopped eggs and toss gently. Chill for 1 to 2 hours before serving.
