Some say I possess the appetite of a hearty eater. Whether that’s meant to flatter or critique, I’ve chosen to embrace it positively. Food is my passion. I relish diverse cuisines, from vegetables and fruits to desserts and meats. While I may talk up a storm about chicken, my true culinary love lies in beef. Set a substantial steak before me, and I’ll gladly devour it in the presence of any companion, be it a date, partner, family member, or child. Just remember: don’t request a nibble or attempt to snatch one without permission. You might risk losing a finger. Consider yourself warned.

The genesis of this dish stemmed from a craving for meat and potatoes, coupled with a desire to minimize dish cleanup. Hence, I crafted this delightful dinner one evening. Three steaks suffice for my family’s appetite—my husband and I each savor one, while the kids divide the third amongst themselves. If the steaks are petite, you might stretch to four, but that’s my cast iron’s capacity limit.

The dinner transpired quietly, the only sounds emanating were those of contented munching on the savory steaks and potatoes. Frankly, I relished the tranquility. Amidst life’s chaos, I seize any opportunity for peace, particularly when it accompanies a scrumptious meal.

  • 2-4 petite steaks
  • Salt and pepper to taste
  • Garlic powder to taste
  • 1 tablespoon olive oil
  • 2-4 pounds baby potatoes, diced
  • 2-6 tablespoons salted butter, softened
  • 2 teaspoons minced garlic
  • 1 teaspoon dried Italian herb blend
  • 1 teaspoon chopped fresh thyme
  • 1 teaspoon chopped fresh parsley

Step 1: Preheat the oven to 400 degrees Fahrenheit. In a small bowl, combine softened butter, minced garlic, and dried herbs, then set aside. Generously season both sides of the steaks with salt, pepper, and garlic powder.

Step 2: Heat a skillet over medium-high heat and drizzle with olive oil. Sear the steaks for 2-3 minutes on each side until beautifully browned. Transfer the steaks to a plate and set aside.

Step 3: Add diced potatoes to the skillet and season generously with salt, pepper, and garlic powder. Sauté for 3-5 minutes until the potatoes develop a golden brown hue. Push the potatoes to one side of the pan and return the seared steaks to the other side.

Step 4: Transfer the skillet to the preheated oven and bake for 15-20 minutes until the potatoes are fork-tender and the steak reaches your preferred level of doneness.

Step 5: Upon removing from the oven, place a dollop of the garlic butter on each steak and the remainder on the potatoes. Allow the butter to melt over the food, then gently stir the potatoes to coat them in butter. Finally, garnish with chopped thyme and parsley before serving.

Indulge and savor every bite!
