The genesis of this dish stemmed from a craving for meat and potatoes, coupled with a desire to minimize dish cleanup. Hence, I crafted this delightful dinner one evening. Three steaks suffice for my family’s appetite—my husband and I each savor one, while the kids divide the third amongst themselves. If the steaks are petite, you might stretch to four, but that’s my cast iron’s capacity limit.

Ingredients:

  • 2-4 petite steaks
  • Salt and pepper to taste
  • Garlic powder to taste
  • 1 tablespoon olive oil
  • 2-4 pounds baby potatoes, diced
  • 2-6 tablespoons salted butter, softened
  • 2 teaspoons minced garlic
  • 1 teaspoon dried Italian herb blend
  • 1 teaspoon chopped fresh thyme
  • 1 teaspoon chopped fresh parsley

Instructions:

Step 1: Preheat the oven to 400 degrees Fahrenheit. In a small bowl, combine softened butter, minced garlic, and dried herbs, then set aside. Generously season both sides of the steaks with salt, pepper, and garlic powder.

Step 2: Heat a skillet over medium-high heat and drizzle with olive oil. Sear the steaks for 2-3 minutes on each side until beautifully browned. Transfer the steaks to a plate and set aside.
